THE BEST EVER GREEK SALAD

Once upon a time when I was a teenager, approx 5 years ago. *cough* I visited my sister in Greece. For one month we gorged on fried feta cheese, gyros, and calamari, once in a while for good measure we threw in a Greek salad. It wasn't until I got home, that I realized that I needed that salad everyday in my life. I created this recipe to fulfill these desires. The end.

 

Traditional Greek salad is made with red onion, cucumbers, tomatoes, olive and feta cheese. There ain't no romaine lettuce in there! Why waste tummy space on that stuff when you can have an abundance of the stuff you really want. Also...white vinegar. Don't get fancy with all the balsamic, and basil infused apple cider wine vinegar stuff. I did however throw in some red and yellow pepper, and you can too. I'm not here to hold you back, you are master of your domain and you call the shots. I'm just a simple Greek Goddess here to guide you. ha ha

 

 

 INGREDIENTS

 

Salad:

  • 1 cucumber, quartered and diced

  • 2 cups cherry tomatoes, halved

  • 1 red pepper, diced

  • 1 yellow pepper, diced

  • 1/2 red onion, diced

  • 1 cup kalamata olives

  • 1 cup crumbled feta cheese (goat)

 

Sauce:

  • Juice of half a lemon

  • 1/4 cup olive oil

  • 4 tablespoons white vinegar (more to taste)

  • 1/2 teaspoon sugar

  • 1/2 teaspoon oregano

  • 1/2 teaspoon basil

  • s+p to taste

  • 1/2 cup crumbled feta cheese (goat)

 

 

METHOD

 

  1. Cut all the vegetables into larger chunks and stir to combine.

  2. Combine all the dressing ingredients in a blender or food processor and gently blend until feta begins to break down and become creamy.

  3. Add the dressing to the salad stir to incorporate. Top with remaining feta cheese and put in the fridge until ready to serve.
