KEYLIME PIE OVERNIGHT OATS

Happy St. Patty's Day!! In lieu of this Irish holiday I took my favourite cheesecake recipe and mixed it with my basic overnight oat recipe and out came key lime pie overnight oats!! I added an avocado to make it EXTRA creamy, and of course to turn it green. It was a hit with the hubbs and babies - no one suspected the green colour came from macha powder and no one asked. *mic drop. Queue recipe.

 

 

 

INGREDIENTS

 

  • 1/3 cup old fashioned oats

  • 1/2 cup almond milk (or any milk you like)

  • 3/4 cup vanilla Greek yogurt

  • 1 Tablespoon chia seeds

  • 1/4 cup key lime juice

  • zest of 2 small key limes

  • 1 teaspoon honey (use any sweetener you like)

  • 1-2 teaspoons  matcha powder

  • Crushed graham crackers for garnish

 

METHOD

  1. Add oats, chia seeds and matcha powder to a jar. Stir to combine.

  2. Add to the jar, almond milk and Greek yogurt. Stir to combine. 

  3. Cover with a lid or saran wrap and place in the fridge overnight.

  4. Top with more Greek yogurt, a sprinkle of chia seeds and crushed graham wafers.
