STUFFED AVOCADO {vegan}

Totally meant to publish this post ages ago, better late than never right?!

​So I was making a salad (again) and was about to cut up the avocado that I sliced in half and thought "Why don't I throw the salad in the middle of the avocado and dig it out as needed?". Genius right?! So thats exactly what I did, and it has been life changing. My hubby was jealous but since I know the man has an appetite, I added a tin of tuna with a glob of greek yogurt, picked asparagus and artichoke hearts. He said it was the best thing he ever had! I hope you agree! Its totally cool to get messy with these, I won't judge you.

INGREDIENTS

  • 2 avocados, cut in half and pit removed

  • 1 large tomato, diced

  • 1 red pepper, diced

  • 1/2 cucumber, diced

  • 1/4 red onion, diced

  • 1 bunch of cilantro, chopped

  • 2 limes, juiced

  • 2 tbsp, olive oil


METHOD

  1. Combine, ingredients in a bowl and toss to combine.

  2. Place 1-2 avocado halves in a bowl, add salad to the avocado halves and dig in to enjoy!!
