I promised a friend I would post this...at least 2 weeks ago. So ill cut straight to the chase. The ingredients fall short of "healthy" but enjoying these dishes once in a while, I believe, helps in the long run. Avoiding everything that is toxic, would mean that you could never leave your house - believe me, the air you breath and that your skin breathes everyday, is far worse than non-gmo-organic-vegan-hippie-mocha-frappachino-no-whip that you once in a while indulge in. Don't be so hard on yourself, go ahead and make this recipe and be happy :)
1 head of lettuce, washed and dried and cut into quarters
1 lb bacon, cooked and chopped into chunks
1 C cherry tomatoes, halved
*option to add chopped red onion
Mix all dressing ingredients in a bowl and whisk to combine.
Assemble salad and top with dressing and more bleu cheese.
My husband loves adding balsamic vinegar as well! Yum!!
