Most. Simple. Salad. Ever. I basically took the glory bowl dressing recipe, as I had most of the ingredients here up at the lake (and I'm always looking for an excuse to use the nutritional yeast flakes on everything) and I dumped it on random salad ingredients. I didn't feel like cutting up a bunch of veggies so I tossed a huge amount of kale with white beans and tossed on the creamy dressing with a bit of cooked quinoa. BAM! One of my favourite salads made to date. Enjoy!
2 Tbsp nut butter (I used sunflower seed butter, tahini is great too)
2 Tbsp olive oil
1 Tbsp nutritional yeast flakes
1 Tbsp apple cider vinegar
1/2 Lemon juiced
1 Tbsp agave (honey or maple syrup can be used)
1 Tbsp soy sauce
1 Tbsp water
1 clove of garlic, minced
1 tsp Sriracha hot sauce
s+p to taste
Mix salad dressing ingredients in a blender and mix until combined (add more oil if you'd like it thicker). Or mix by hand with a whisk.
Wash and cut kale and add to a large bowl. Toss with quinoa, white beans and dressing. Enjoy!
