Welcome to the best lettuce wrap recipe EVER!!! I've played around with this so much and found that the ingredients I use for most of my recipes ALSO work so great for this recipe as well! Don't stress if you don't have all the ingredients on hand - there's nothing worse than going to the grocery store to buy stuff you'll use 1 tsp of. Those are the types of recipes that I just tend to steer clear of. I have used rice wine vinegar in this recipe, because I have it. If you don't, use red wine, Apple or plain white vinegar. Don't have Sriracha, use another hot sauce (or not at all), same goes with the spicy mustard. Just use what you got. Promise it'll all workout in the end ;) this recipe is great for 2-3 people. Double it if you are making it as a main course for a whole family or it works perfectly as is for an appi. Hope you love it as much as we do.
3 chicken breasts
1 1/2 C water chestnuts, cut in small pieces
1 C fresh mushrooms, cut in small pieces
1/4 C chopped onion
3 garlic cloves, minced
Cook chicken in oil on medium heat. Remove and chop into small pea sized pieces.
Chop water chestnuts, mushrooms and onion into small pieces and set aside.
Mix special sauce and set aside.
Add chicken with water chestnuts, mushroom and onion in the pan with a tbsp olive oil.
Add 1/4 of special sauce to the pan and cook for 2 min.
Serve chicken mix on top of ice berg lettuce pieces. Top with special sauce and enjoy!!
