Boring breakfast options getting you down? Or maybe hitting the snooze button for some extra zzz's is holding you back from having a wholesome meal? I introduce you to these super simple and delicious morning oats (well actually my sister introduces you to them, since she introduced me ha ha). Make them the night ahead (and make many at a time since they keep well) in handy mason jars and store them in the fridge until morning. This recipe is made for 1 jar, so adjust according to how many days ahead you are making! I would toss in the fresh fruit, nuts and pee pollen in that morning, but if that's even too much for you (no judgement here) then just throw them on the top and stir before eating.
Never tried bee pollen before? Then you definitely should add it to your arsenal of superfoods. Bee pollen is richer in proteins than any other food source. It contains more amino acids than any found in animal sources, like beef, cheese and eggs (in equal weight). Did you know that 1 tsp of bee pollen takes 1 bee, 8hrs a day for one month to collect? There are many benefits to this complete food source including physical energy and athletic performance as well there are reports of enhanced immunity, allergy reduction, weight loss and stress relief. The stuff comes at a price, but it is definitely worth it as the dosage is low (about 1 tsp/day). Be sure when you purchase bee pollen, that it comes from a source that is pesticide-free.
1/4 C dry rolled oats
1/4 C almond milk
1/4 cup low-fat Greek yogurt (mine is lactose free)
2 tsp chia seeds
1/8 teaspoon almond or vanilla extract
1 tsp stevia (or your favourite sweetener)
Half of a mango, diced (or any fresh fruit you enjoy)
2 Tbsp cashews (or any nuts you have handy)
1 tsp bee pollen
1/2 tsp cinnamon
Add all above ingredients (except the fruit and nuts) into a small mason jar.
Stir to combine. (Option to add fruit and nuts on the top and stir to combine before eating)
Add fruit and nuts the morning before eating, give it a stir or a shake. Enjoy!
