TOASTED PISTACHIO NICECREAM {dairy-free}

Do you love ice cream? Me too; however my tummy doesn't. So I have come across banana ice cream aka nice-cream. It tastes so delicious and ACTUALLY has the same consistency as ice cream. My husband and kids eat it too so this is critic friendly. We have so much fun trying out different ingredients. My husbands favorite is a BIG spoonful of almond butter and and chocolate chips and I love adding frozen mango. Today though, I toasted pistachios and tossed them both in with the bananas and on top! WOW! 

Pistachios great for Vitamin E (integrity of cells: ie skin cells), B-Vitamins (mood enhancers, treats stress and anxiety, lowers blood pressure) and boasts a ton of minerals. Basically these things are like magic and so you should eat them every day.

INGREDIENTS

  • 2-3 Frozen bananas, cut into 2" dollar sized pieces

  • 1/2 C toasted pistachios (on baking sheet in oven at 250 for 15 min)


METHOD

  1. Blend in a powerful blender or processor the bananas and pistachios. DO NOT add any liquid. Keep blending until the bananas have melted a bit and create a smooth ice cream like mixture. Stop and scrape down the sides if needed.

  2. Top with more toasted pistachios.
